Vécia col pisst: vecchia col pesto di cavallo

Ingredients for 4 people:
2 potatoes, 2 onions, 3 fresh tomatoes
2 cloves of garlic, parsley, celery, pepper, salt, butter
600 grams of potatoes
300 grams of horsemeat

Preparation :
Chop thinly an onion, garlic, parsley and celery, add salt and pepper. Chop into thin slices the other onion, the tomatoes and the peppers.
Put the vegetables in a pan where some butter has been melted, add the chopped onions, garlic and parsley.
Cook at a weak fire adding the stock slowly.
Add the horsemeat and, finally, the potatoes previously chopped into pieces and fried in olive oil.
